Mountain Dew Cupcakes
By cupcake girl on December 5th, 2007 . Filed under: Recipes .I originally came up with this recipe during the summer. But, I just made them again for my husband to take to work. They have become a favorite of my husband, who is a major Dew junkie. Any Dew or citrus lover will think they rock!
Mountain Dew Cupcakes
1 cup butter (2 sticks)
2 cups sugar
4 large eggs
3/4 cup Mountain Dew
1/4 cup of lemon and lime juice (juice from 1 lemon and 1 lime)
zest from 1 lemon and 2 limes (separate into 2 piles, one for buttercream)
1 1/2 teaspoons lemon extract
2-3/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1. Beat butter on medium for 30 seconds.
2. Add sugar and lemon, lime zest. Beat on medium-high until light and fluffy.
3. Add eggs one at a time, Scrape sides of bowl in between additions
4. Whisk together flour, baking powder, and salt in a bowl. Add to mixer bowl. Turn on low for 5 seconds.
5. Add the Mountain Dew, lemon/lime juice, and lemon extract . Mix to combine.
5. Scoop into cupcake papers about two-thirds full.
6. Bake for 18-20 minutes until a cake tester comes out clean.
Mountain Dew Buttercream
1 cup butter (2 sticks)
4-5 cups powdered sugar
2 tablespoons Mountain Dew
Juices from half of 1 lemon and half of 1 lime.
Lemon and lime zest (rest of zest from cupcake recipe. Or zest from half of 1 lemon and 1 whole lime)
1 teaspoon lemon extract
neon green food coloring (yellow and blue if you dont have green)
1. Sift powdered sugar into a bowl or onto parchment
2. Beat butter at medium-high speed until creamy
3. Add half of the sugar, turn mixer on low for 5 seconds.
4. Add the Mountain Dew, zest, and lemon extract . Beat until combined.
5. Add food coloring to the desired color.
6. Gradually add remaining sugar until you get to the consistency and sweetness you like.

I just had to add, I baked them at 350 degrees; it doesn’t specify the temperature in the recipe, but they turned out well at this temperature. *shrugs*

I love Mt Dew and I am so gonna try this recipe. However, Mt Dew isn’t a lemon/lime soda. It’s totally orange based! I’m gonna tweak it and add concentrated orange juice. I’ll let you know what happens.

ha, I never thought of using Mnt Dew instead of coke/diet coke or some sort of alcohol.. I’ll have to do that with my own recipe and see how my guys like it!

Here is another recipie that is a HUGE hit around my house! It is so easy and cheap to make too!!
The Most AMAZING Apple Dumplings….
1- 12 oz. can Mt. Dew
2-8oz. tubes crescent rolls
2-Granny Smith Apples
Cut each apple into 8 slices (makes 16 pieces.) Wrap 1 slice in each crescent. Place into 9×13 baking dish.
Mix 1 cup sugar, 1/2 t. cinnamon, 1 stick melted butter. Pour over top of dumplings. Pour can of Mt. Dew over entire dish.
Bake 350 for 40 minutes.

My roommate [a Mt. Dew freak like your husband] found this recipe and demanded I make them. And they were delicious!
However, I noticed the icing was a bit thin, even after 5 cups of powdered sugar. But some corn starch easily solved this problem.
All in all, a great recipe!!

Also something I’ve found really amazing is pancakes made with mountain dew in place of water, or also any sort of soda or fruit punch. My friends started the whole idea…. they call them man cakes [dont ask, I dont know]

Hi! I was wondering if you meant 1/4 cup lemon and lime juice as 1/4 cup AND 1/4 cup lime or do you mean 1/4 COMBINED lemon and lime juice? I am in currently in Ohio so one lemon and one lime are MUCH different sizes than in California, where I used to live, so I wasn’t sure how you meant it. Also, how did it turn out with using orange juice?

these were ok… but it needed less lemon and lime and more mountain dew. i think i’ll modify the recipe the next time i make these… but good, none the less

I think I screwed up the recipe. I dumped all of the juice I got out of the lemon and lime. Also, I had to mix everything by hand, so the consistency of the cakes is completely unappealing. The tops came out rock solid and the insides could be used as stunt mats in films. I left them out overnight in my cold, dry kitchen and it made a unique texture that was quite appetizing though.
I didn’t like this, to be honest. I’m a hardcore Dew fan, and this tasted like Grandma’s Lemon Cake more than my preferred method of diabetes. I saw some other Mt. Dew recipes on the comments box that would be a lot easier to replicate and would definitely taste more like Mountain Dew than these cupcakes did.

THESE ARE DISGUSTING. Do not waste your time and effort on making them. Me and my sister LOVE Mountain Dew so we made these thinking they were gonna be great. We spent about 2 hours on them, and they are disgusting. I had to spit it out it tasted so bad. And on top of that, we used ALL the powdered sugar, and ALL the butter in the house. Just warning everybody.

Those were FABULOUS. A friend and I made them together for my birthday, and they were wonderful. The best part I’d have to say was the zest in the frosting and stuff. Awesome. This recipe makes about two dozen, for those of you curious, and 350 F degrees is perfect for them. :)

For those people who claim that these are gross, I am guessing you are not very good bakers because these things were delicious. This is a great recipe! I really liked it. They are time consuming but so worth it in the end. Personally I think they recipe may call for a little bit more citrus juice then I would put in but the cupcakes were still good. Thank you! :D

Just finished making these, they turned out awesome! I used slightly less lemon juice than recommended in the cake batter so the lemon/lime flavor was much more subtle. If you’re making mini-cupcakes bake for 16 minutes instead of 18-20.

This recipe turned out all right, but I really changed it a lot. Instead of two limes, I only had one, so half the lime taste… I used significantly less lemon juice and zest and everything, and a tad bit more Mountain Dew. The cupcakes themselves turned out looking somewhat like cornbread muffins–but were really tasty. They still tasted more lemony than like Mountain Dew, but with a bit more tweaking I think I’ll have it.
One thing I couldn’t quite get though–I couldn’t get the frosting to thicken! I used a lot of corn starch like one of the commenters above mentioned and powdered sugar, but eventually just called it good at the consistency of slime (it really reminded me of my childhood…Nickolodeon, anyone?). It was still pretty good though.

This is a fantastic recipe. I tried it over the weekend and it turned out perfectly – with any recipe like this though, I am always careful to make sure not to overcook. My oven is a bit on the older side and that can lead me to problems if I don’t keep an eye on things!

I just finished making these delectable little cakes. I excluded the Lemon extract and added about 3 tbs of Mt. Dew and 1 tsp of Lemon juice extra. NOW they taste like Mt. Dew instead of a lemon cake.
Also I made a citrus glaze instead of Buttercream frosting. Much lighter and very tasty. Thank you for the awesome idea! =)

My fiance’s bday is next month and I would love to make these (or even a cake version) for him. From reading some of the comments above I am worried about how they will turn out. He is a Mt. Dew fanatic not a Lemon Lime fanatic and I really want them to be perfect. I was wondering if anyone has perfected the recipe so that it actually taste like Mt. Dew

These cupcakes were not good. We love mountain dew and these cupcakes taste nothing like mountain dew. If you love lemon cake then these are the perfect cupcakes for you.
Good recipe, it just shouldn’t be compared to Mountain Dew.

So I just got done making these… They don’t taste anything like Mountain Dew but they are good. More of a lemon cake, I even attempted to add more dew to the frosting, I think the lemon extract is just too overpowering to get that dew flavor, but again yummy cupcakes!

Very tasty, although a little too lemony like several other people said. Unless you really like lemon, skip out on the extract. Maybe add a bit less juice and more Dew.
The frosting was very thin at first. I just kept on adding more sugar and it turned out delicious (albeit lemony).

I made these for my husbands birthday and they were a huge hit. I was worried I wouldn’t like them b/c I can’t stand Mountain Dew but they are so citrusy and perfect!
I baked them at 350 as another commenter suggested since it wasn’t mentioned in the recipe and they came out perfect.
I had an issue with the frosting being really lumpy! I couldn’t get it to a good frosting consistency and didn’t want to add more powdered sugar since I thought it was sweet enough. Oh well. I’ll definitely be keeping this recipe!

Mountain Dew is my husabnd’s favorite soda. I’m going to try these for his birthday in a few weeks. I wonder if I could cut some of the lemon extract and add orange? Mtn Dew does have orange flavor. I think I’ll also try adding orange zest as well.

I was skeptical at trying these. However, so glad that I did. I am not sure why so many people say they are disgusting, my guess is that they did something wrong and they didn’t turn out. If you follow the directions exactly they turn out perfect!! If you love Mtn. Dew you should love these.

I actually converted the recipe for Code Red Mountain Dew cupcakes. I added orange juice and orange rind. I also used cherry flavoring. They turned out good. The flavor of the Code Red seemed to get lost but was enjoyed by many nonetheless. I think this recipe was done well.

These were very disappointing. They taste nothing like Mountain Dew and I even added extra. They just taste like regular citrus cupcakes, nothing special and not nearly as good as I was hoping. If you’re looking for a Mountain Dew cupcake, this is NOT the recipe.

Hi I just made these for my husband this weekend. We are both Mountain Dew junkies. & They turned out good. But I was looking for more Mountain Dew taste and it tasted like a lemon cake. KI think next time I will nix the lemon extract, zest, & lime juice & use orange instead since mountain dew is made from orange juice. I think its awsome that you thought to make this recipe. These were so annoying. I did the recipe to a tee. The cupcakes wouldn’t cook. The icing turned out lumpy and really gross. It took me an hour and a half. Such a waste of time.

I didn’t follow the recipe. I just took a white cake mix and instead of water, i put mtn dew.. The lemon flavor has nothing to do with the lemon or lime because mine tasted lemony. And i just put vanilla frosting on top because i was already tired of making cupcakes. Everybody liked em

Excellent recipe! I tweaked it a little. I boiled the rest of the can of Mt Dew down to a syrup and used it instead of the lemon extract. Pow! Mt Dew flavor!
