I am not the biggest fan of beets, so I can’t expect my kid to love them.  BUT, I can pretty much guarantee that he will have no idea that they are in these cupcakes.  Even if your child helps you with this recipe, they will probably be so mesmerized by their really vibrant purple color, that they won’t even think about the fact that they are eating their veggies.  It’s worth a try!  But do be aware…beets can make quite a mess (just one more reason your kids will love them, right?)!

A friend of mine surprised me with these Easter Bunny cupcakes the other day.  They were delicious, so I thought I would share them.  The eyes and nose are made from jelly beans, the whiskers from licorice, and the ears from sticks of gum.  Shredded coconut gives the cupcake that fluffy Easter bunny look.

Well, today I found the greatest Mother’s Day gift… for me!  This cupcake sewing box would be perfect for all my little sewing notions. Do you run out of energy to make the frosting after you’ve already baked a whole batch of cupcakes?  Or do you need to head out the door and you don’t have time to frost your cupcakes?  Or maybe you just don’t want more dishes to clean up?  I came across the perfect solution.  Just add marshmallows (see here) to the tops of your cupcakes 5 minutes before they’re done baking, and then spread out the melted marshmallow over the cupcakes.

It’s not too late to celebrate April Fool’s Day with some Spaghetti and Meatballs cupcakes. Here’s one way to do it, from The Farm Girl: Pipe on noodles using small round icing tip. For meatballs, dunk some Ferrerro Rocher chocolates in raspberry jelly–yum!

Easter is my favorite cupcake holiday. You can do anything you want with pastels and you’re good to go–so many options! Plus, I’m kind of obsessed with bunnies. Anyway, here is my first attempt this year. (For the grass, I used Wilton tip 233.) If you try this, I HIGHLY recommend Starburst jelly beans. I don’t even like candy, and these are delicious!

Any fans of The Hunger Games series out there?  What better way to celebrate the new movie than with cupcakes!  I searched and found these.  Try out one of these ideas or create your own for a pre or post-movie party!

Last week I visited my friend in Colorado and was lucky enough to see both Boulder and Denver while on my trip.  In Boulder we stopped into Tee and Cupcakes to try three of their cupcakes.  I loved the outside of the cupcake shop, which is shown above, and since we were there pretty early in the day there was a wide selection of cupcakes to choose from.  We decided on the following flavors: girl scout cookie samoas, chocolate with salted caramel frosting, and white on white or vanilla with vanilla frosting.

My friend and I agreed that while we liked the creative flavors and the appearance of the cupcakes we didn’t love the consistency of the frosting or the cake.  The frosting we almost like whipped cream or cool-whip with a very airy texture.  We also weren’t crazy about the cake consistency and flavor so overall we thought they were good cupcakes but not great. Today my daughter had money in her pocket to burn and really wanted to buy something for herself. She loves to do craft projects, so we headed to our local AC Moore and here is what she chose to buy.
Although it is a bit hard to see in this photo, this is Perler Beads Cupcake and Butterfly Fused Bead Kit. For those of you who don’t know what Perler beads are, you simply fill the cupcake shaped pegboard with the beads, iron it and voila! You have a lovely cupcake to make into a magnet or pin.  This set was $7.99 at AC Moore and you can also find in on Amazon. 

 And here are the cupcakes my daughter and I made!  We had so much fun!

Who can resist a banana-toffee cake with a dulce de leche center, caramel cream cheese icing and chunks of astronaut ice cream?

Go back to the “good old days” with these soda fountain cupcakes.  From left to right, they are creamsicle, cherry soda and root beer.  All you have to do is bake a batch of cupcakes and use food coloring and food flavoring for each type of frosting.

Which one would you choose?  I think I’d definitely go with the root beer, but they all sound delicious!

I love goat cheese! I am constantly adding goat cheese to sandwiches, salads, pasta dishes and now that I have found Buttercream Blonde’s recipe for chocolate and goat cheese cupcakes, I think I will be adding goat cheese to cupcakes!  These nontraditional cupcakes definitely sound like something unique food lovers will enjoy.  The cupcakes are made up of three of my favorite things, a buttermilk chocolate cake, goat cheese frosting, and are topped with red wine reduction!
