Ice Cream Cupcakes – Philly Swirl

I had the privilege of tasting these ice cream cupcakes a few weeks ago and at first, we were not in love. No, not at all. My teeth hurt, I got ice cream up my nose, and really.. I couldn’t bite into the cake for the life of me.. but it was then that I realized, I should let it sit out for a second.. and I did just that. Set my ice cream cupcake on the counter, and came back to it in about 5 minutes.. and what do ya know? Soft, creamy, and good. The icing is my favorite part. I am not a big fan of the cake… but the ice cream was really good. The cake reminded me of a brownie almost. I am not a big fan of brownies.

I just saw these at BJ’s last night and my husband wondered why the cupcake and ice cream hadn’t been combined before! what a great idea!
