Weekly Cupcake Collection
This week there were lingering St. Patrick’s day cupcakes, a wide variety of marshmallow cupcakes for the Cupcake Hero deadline (March 28th!) and cupcakes celebrating the upcoming Easter holiday. It was hard to narrow down the list to 7 and I spent a good many hours drooling over the choices. Enjoy!

Easter is fast approaching and it would only be fitting that the featured cupcake be symbolic of the impending holiday. No one does it more whimsical and sweet than one of my favorite cupcake artists, Bakerella. Not only does she has the most creative soul I’ve seen in the cupcake community but she’s also willing to share how she does it. I have great respect for that.
Congrats Bakerella! You are the Cupcake of the Week!

Hippity Hoppity Cupcakes Cupcakes by Bakerella
Cupcakes: I used a Rose Berenbaum recipe for Yellow Downy Butter Cake from her book, The Cake Bible, which, by the way is a fantastic resource. Lots of recipes, tips and explanations. I however, need a few more lessons in “cake chemistry” to get mine to come out exactly the way it’s supposed to.
Frosting: Basic Buttercream
Decorations: Fondant for the ears. I used some bunny cookie cutters to shape the fondant the night before. I cut off the bunny face (see pic below) to make it easier to stick the ears into the cupcakes. Then I left them out on the counter to dry out so they would stand up straight. For the curved ears, I placed in the bottom of a shallow bowl so they would form to that shape while they dried. You could even lay them over a glass, or something round like that. Also, I needed something for the whiskers, so I came across these Japanese somen noodles that worked out pretty good. And then, just m&ms and different sprinkles for the faces. Bunny Fun!

Holy moly! Thanks so much for picking my nerdfest cuppies! Goodness knows they are silly but they look just plain shameful in the same post as those adorable Easter Bunny cupcakes~ too cute!
